1. Caesar Salad Dressing

Caesar Salad Dressing
This Caesar Salad Dressing is incredibly easy to make for a simple salad every night of the week. It’s rich and smooth, and it’s free of any unwanted ingredients.

Ingredients

6 oil-packed anchovy fillets, drained

1 clove fresh garlic pressed or finely minced

pinch sea salt

2 large egg yolks

2 Tablespoons fresh lemon juice

1 teaspoon Dijon mustard (use sugar-free for Paleo/W30)

2 Tablespoons light olive oil

1/2 cup avocado or light olive oil

sea salt and ground pepper, to taste

Instructions

  • On a plate or in a cup, combine the anchovies, garlic, and a pinch of salt. To make a paste, use a big tablespoon.
  • In a wide-mouthed pan, combine the egg yolks, lemon juice, mustard, oil, pepper, and anchovy paste.
  • In the pot, position the hand blender or immersion blender and lower it to the bottom. Blend the dressing until it is smooth and creamy by pressing the button.
  • Drizzle over romaine lettuce and season with salt and pepper to taste.

If you don’t have an immersion blender, you can use a big mixing bowl to combine the anchovy paste, egg yolks, lemon juice, and mustard. Whisk in the oil in a slow, steady stream until the mixture is thick and creamy.

Since anchovies are salty, use caution when adding salt at first. Add a pinch at a time before you reach your desired taste. And if you’re worried about eating raw eggs, go for pasteurized eggs.
